What causes black bell peppers to turn black? This is a question that I hear a lot and the answer is not completely known, but it is believed that several factors may play a role.

It could be the genetics of the black bell pepper? Both the color and the flavor of a pepper can be controlled by different genes, and each pepper has its own set of genes that are responsible for its specific color or flavor.

You can tell if a pepper is fruit-ripened (or ripens earlier than other peppers) by looking at its stem end: if it is covered with dark green patches, it’s fruit-ripe.

One possibilities are that the peppers are exposed to too much sunlight, which causes them to produce excess melanin. This pigment is what gives peppers their black color.

Another possibility is that they are over-fertilized with nitrogen, which can also lead to an increase in melanin production.

Of course, there are different varieties of black bell peppers. The unusual thing is, some varieties are actually purple or green but still get called black in color.

We recommend placing the peppers in a dark, cool and dry place. For most of us, that would be the refrigerator.

Bell Peppers should be stored at a temperature between 10 to 12 degrees Celsius (50 and 56 degrees Fahrenheit).

Bell peppers appreciate humidity so storing them inside a plastic bag should be the preferred option.
